I came home from Greece inspired to create a my own version of their moussaka. Mine is made with chicken in place of veal and nested into an eggplant shell. It was really very tasty if I do say so myself!

Poznan, Poland: Dad, Taryn and I will take advantage of some very inexpensive airfares and fly to Poland to visit what we believe is the homeland of Dad's ancestors the Imbiorski's and the Dziuk's. We found what we hope is an amazing hotel. Look at the website and check out the brewery and the restaurant menu's! YUM! We are so excited! Dad goes home to Poulsbo....boo hoo!
Not yet scheduled:
*A hydrofoil ride to the Island of Capri...funicular ride up to one of the higher villages and then a twelve minute chair lift with breathtaking views. Once at the top we'll have a picnic before coming back down and exploring more of the island.
*A drive to Vesuvius...possibly a wine tasting and lunch tour.
